Description
For me, this is a coffee that really embodies the Sway Collection. At first I wasn't that into it, but I knew someone would be. Now I'm that someone. Every week it offered something different, and it's been a treat watching the coffee change, and my opinion of it along with it. Never judge a book by its cover; halfway through, you might find you're enjoying yourself. We're getting chocolate liqueur, green apple acidity, and an almost candy-like blackberry sweetness.

About the Producer
This lot comes from smallholder farmers in Manxieba, processed in partnership with Torch Coffee. Torch works directly with growers in Yunnan and believes experimentation pays off in two ways. New techniques push flavor further, and they can also help small farms earn more and stay viable.
Where it comes from
Manxieba sits in Yunnan, in China's far southwest, where nearly all of the country's coffee is grown. The coffee grows at 1,400 to 1,600 meters. Catimor is the region's workhorse variety
Processing notes
The cherries ferment sealed, without oxygen, for 30 days, then dry down to about 35% moisture. They're sealed again for a second 20-day fermentation before a final drying to 10–12%. The long, oxygen-free ferments are what bring out the boozy depth and candied fruit sweetness.
