Description
When we were looking for a new coffee for our Steady Collection, we wanted something that had depth, acidity, and body in balance. Nothing too bass-heavy, nothing too bright. This Caturra and Bourbon from Guatemala was it. A chocolatey mouthfeel, soft peach sweetness, and a lime-like acidity to keep it lively.

About the producer
Francisco Cardona Martín bought La Colmenita in 2002 with a clear goal: grow exceptional coffee from exceptional varieties. Around town he's known for pouring everything back into his farm and his community. He stays busy! When he's not working his coffee, he's tending his bees or running the small grocery store his family opened in town.
Where it comes from
Finca La Colmenita sits high above the valleys of San Pedro Necta, Huehuetenango, at 1,850 to 2,000 meters, where the coffee spends most of its time in the clouds. La Colmenita means "The Beehive." Francisco keeps bees on the farm, and they pollinate the coffee as they work.
Processing notes
Washed. After picking, the cherries are depulped and the coffee ferments for 48 hours. It's then washed clean and dried on concrete patios for 11 days.
